Superb family roasting joint and great served thinly sliced cold the next day.
Recipe Suggestion:
Bring joint to room temperature.
Sizzle the sides in a pan on high heat then put in a roasting tin in the oven and cook on a high temperature for 20 minutes then drop to medium temperature for 8-10 minutes per pound of beef.
Stand for 30 minutes in a warming oven for those juices to settle before serving.
