Tzatziki
This Greek and Turkish yogurt-based sauce is usually served as an appetizer or with grilled meats, sprinkle the feta over top. Great in Pittas with kebabs or spicy meats, cool down any spicy meats with a dollop of it.

Ingredients
1/2 cup (125 mL) shredded cucumber
1/4 tsp (1 mL) salt
1/2 cup (125 mL) Brown Cow Organics Natural yoghurt
2 tbsp (30 mL) frozen chopped spinach, thaw, squeeze dry
2 cloves garlic, minced
2 tbsp (30 mL) chopped fresh dill
2 tsp (10 mL) lemon juice
1 pinch pepper
1/3 cup (75 mL) crumbled feta cheese
Black Olives, Olive Oil, mint leaves to garnish

Preparation

Mix cucumber with pinch of the salt; let stand for 10 minutes. Squeeze out moisture.

In small bowl, mix together cucumber, yogurt, spinach, garlic, dill, lemon juice, pepper and remaining salt. (Make-ahead: Cover and refrigerate for up to 2 days.)

Garnish with feta cheese and or olives, olive oil and mint leaves
