Organic Beef Cote de Boeuf Steak grass fed and dry aged

Côte de boeuf is a really fantastic tasty steak as it comes from a well-used muscle and has plenty of delicious fat marbling through it. This cut of our organic beef is effectively a slice from an organic beef rib on the bone joint. There are various cooking methods suggested - one long and slow and another a bit quicker, you shouldn't need to add any fat or oil to the pan as this steak has it's own.

Côte de boeuf - slow cook
Preheat the oven to 55°C/gas ¼, or as low as it will go. Place the unseasoned Cote de Boeuf on a baking tray, put in oven for 3 hours (until the internal temperature is 55°C tested with a meat thermometer). Once at the correct temperature, remove from oven and place into a hot pan and sear the beef on one side 2-4 minutes and repeat on the other side for the same. Simply plate up once seared. You shouldn't need to rest the beef when cooking this slow method as long as you have kept the oven extremely low throughout.

Côte de boeuf - fast cook
Heat oven to 200C/400F/Gas 6. Now take a large ovenproof frying pan and heat on a high heat until very hot, then add the steaks and fry for 1-2 minutes on each sides, or until browned on both sides.
